										<content:encoded><![CDATA[<p style="text-align: justify;">Lapsepõlvest mäletame nii huvitavaid kui ka imelikke toite/maiuseid, mis olid meie lemmikud. Näiteks super hea magustoit oli (ja on siiani) hapukoor kakaoga. Mulle meeldis veel näiteks süüa saia koos suhkruga &#8211; saia peale määrisin paksu või kihi (võid peab olema alati ausalt igal võileival) ning selle peale raputasin suhkru. Ja kui selliseid maiuspalasid ei viitsinud teha, siis kiireim viis &#8220;maiustada&#8221; oli lihtsalt või söömine otse võikarbist. Võib-olla sellest või söömisest on välja kujunenud minu praegune võikreemide armastus. Moorapead mulle just seetõttu meeldivadki, et nende sees on võikreem.</p>
<p style="text-align: justify;">Mu emal on selline harjumus, et kui mingil tähtpäeval või erilisemal päeval on tarvis mulle külla tulla, siis ta toob tihti just moorapäid. Ja see on tal kümnesse otsus, sest moorapeadega ei saa eksida. Erinevatel tootjatel on moorapead ka kõik erinevad ning mul ei ole kusjuures tekkinud kindlalt lemmikut. Poe omadel on tihti mingi miinus juures ning parima tulemuse saaks kui liidaks erinevate tootjate moorapead üheks. Ehk ma tahan öelda seda, et ühe tootja moorapeal on nt kukkel liiga paks ja kuiv, teisel on koonerdatud võikreemiga, kolmandal on pealmine pumat liiga pehme jms. Maitselt on nad kõik väga head, aga kui sööd moorapäid aasta lõikes nii palju kui mina (täpsustuseks: ma ei söö neid tuhandetes, isegi mitte sadades, lihtsalt rohkem), siis hakkavad tekkima eelistused.</p>
<p style="text-align: justify;">Seetõttu olen ammu mõelnud, et proovin ka ise moorapäid teha. Teoorias tundub imelihtne &#8211; biskviittainast tehtud poolikute kuklite vahele läheb võikreem ning pealt kastad kuklid pumati sisse. Praktikas aga pean tõdema, et esimene partii moorapäid mul ei õnnestunud. Esiteks, ei tulnud mul välja biskviittainast mõnusate kohevate poolikute kuklite tegemine. Teiseks, jäid kuklid liiga kuivad ning kolmandaks, reageeris pumati tegemisel tuhksuhkur liigselt kuumaga ning kristalliseerus (ma ei tea, kuidas see isegi võimalik saab olla, aga saab). Aga ma ei andnud alla, hakkasin otsima, kuidas erinevates retseptides kirjas on ning proovisin uuesti. Kuna minu jaoks osutus nende tegemine arvatust keerulisemaks, just tehniliste nüansside osas, siis mõtlesin, et teen jällegi sellise samm-sammulise retsepti, mille juurde lisan ka pildid.</p>

<p style="text-align: justify;">Selleks, et oleks lihtsam retseptis toimuvat jälgida, saab moorapeade tegemise jagada nelja etappi: biskviittaina valmistamine, võikreemi valmistamine, moorapeade kokkupanek ning glasuurimine.</p>

<h3><span style="text-decoration: underline;"><strong>BISKVIITTAINAS</strong></span></h3>
<p style="text-align: justify;">Ma olen eelnevalt korduvalt valmistanud biskviittainast ning ei uskunud, et mul võib sellega probleeme tekkida. Moorapeade valmistamisel, peab biskviittainas olema pigem tahkem ja kohevam, kui vedelam, et küpsetuspaberile poolikuid kukleid piserdades, need ka kuklite kujuga jääksid, mitte ei vajuks lamedaks. Esimese ahjuplaaditäie sain täiesti lamedaid biskviitpõhjasid ja ma ei saanud aru, kus ma vea tegin. Katsetasin erinevaid viise ning leidsin nami-nami kodulehelt ühe suurepärase ülevaate biskviitpõhja küpsetamisest. <p style="text-align: justify;">Enne taina valmistamist tee teised ettevalmistused. Valminud taina kogusest saad 16 poolikut biskviitkuklit. Selleks, et need tuleksid enam-vähem ühe suurused joonista küpsetuspaberile sirkliga 6 cm läbimõõduga ringid. Joonista pastakaga või mõne muu tumedama joonistusvahendiga ringid üle ning keera küpsetuspaber tagurpidi &#8211; nii kumavad ringid läbi paberi, kuid ei puutu tainaga kokku. Tõsta ringitatud küpsetuspaber ahjuplaadile ning tõsta hetkeks kõrvale.</p>

<p style="text-align: justify;">Eelsoojenda ahi 200 kraadini. Eralda munakollased- ja munavalged. Vahusta mikseriga munavalged suhkruga hästi tugevaks vahuks. Vaht peaks olema nii tugev, et mikseri vahu seest välja tõstes jäävad sellesse teravad tipud.</p>

Kuna munakollane sisaldab rasva, siis ei lase rasva sattumine munavalge sisse sellel vahtu minna. Samal põhjusel vali vahustamiseks kauss, mis ei jäta rasva osakesi seintele &#8211; nt roostevabast terasest kauss. Kui pole võtta muud kaussi, kui nt plastmasskauss, mida üldjuhul mikserdamisteks kasutatakse, siis pese see eelnevalt <span style="text-decoration: underline;">hoolikalt</span><span style="text-align: justify;"> &#8211; puhasta kausi servad üle sidruniga.</span></span></td>

<p style="text-align: justify;">Moorapeade kokku panekuks läheb vaja: biskviittainast põhjasid, biskviittaina niisutamiseks hapukat mahla (näiteks õuna- või jõhvikamahla) ning võikreemi. Biskviitpõhjade niisutamiseks tõsta lusikaga mahla põhjade peale. Kui põhjad on niisutatud piserda pooltele põhjadele (kaheksale põhjale) peale võikreem. Suru pealmise biskviitpõhjaga võikreem ühtlaselt laiali ning aseta moorapea kõrvale. Toimi nii kõigi pooltega.</p>

Aseta kastrul pliidile ning kuumuta madal kuumusel, aeg-ajalt segades, kuni segu muutub ühtlaseks ning konsistentsilt hapukooretaoliseks (või pisut vedelamaks).
