<p style="text-align: justify;">Isetehtud leival on mitmeid eeliseid &#8211; tead ise täpselt, millest see koosneb, saad valida ise lemmik lisandeid ning ise tehtud kodustes toitudes on alati killuke seda, mida poest osta ei saa. Ma ei ole leivategemise ekspert, aga jagan leiva tegemist pildiseeriates, et teil oleks kergem jälgida, milline tainas mul mingis faasis välja näeb.</p>
<p style="text-align: justify;">Leiva tegemiseks varu rohkem aega, nii kahe päeva jagu &#8211; täpsustades mitte kaks tervet päeva, vaid ühe päeva õhtul alustad ja teise päeva lõunaks umbes lõpetad. Lisanditeks võib kasutada nii köömneid, seemneid, pähkleid, marju kui ka puuvilju. Arvestama peab sellega, et kui lisand on liiga vesine, siis võib leiva lõpptulemus tulla nätske (näiteks, kui lisad sibulatükke, siis need tuleks enne leiva sisse lisamist pannil kuumutada klaasjaks ning üleliigne vedelik paberiga eemaldada).</p>
<p style="text-align: justify;">Jagan seemneleiva retsepti, kuid samad kogused toimivad täpselt samamoodi ka ilma seemneteta leiva valmistamiseks. Midagi rohkem ega vähem lisama ei pea.</p>

150 g juuretist<br />
175 g + 350 g täisterarukkijahu<br />
500 ml vett<br />
3 tl soola<br />
100 ml suhkrut<br />
2-3 spl rukkilinnase jahu<br />
240 g röstitud päevalilleseemneid<br />
veidi võid vormi määrimiseks</p>

Muidugi võib juuretise valmis segada varahommikul ning leiba küpsetada hoopis õhtul. Juuretis seisab külmkapis 2 nädalat, seega on see piisav aeg, et uus leivategu jälle ette võtta.</p>

<p style="text-align: justify;">Võta külmkapist juuretis ning aseta suurde kaussi. Lisa sellele käesoe vesi ning 175 g täisterarukkijahu. Sega segu vispliga ühtlaseks. Selles etapis jääbki juuretisesegu pigem vedelam, kuid mitte täiesti vesivedel.</p>

<p style="text-align: justify;">Kui eelnevalt sai tainast segada veel lusikaga, siis nüüd võta appi käed ning sega segu ühtlaseks. Sega segu mõnda aega, see aitab kaasa taina kerkimisele. Kui päevalilleseemneid mitte lisada, siis tainas peaks olema lusikaga läbi segatav ning käsi määrima, hetkel veel, ei pea.</p>

<p style="text-align: justify;">Määri ahjuvorm korralikult võiga. Mitmetes retseptides on kirjas, et ahjuvorm vooderdada küpsetuspaberiga &#8211; seda võib teha, aga on lisatöö, kuna võiga määritud vormist tuleb leib väga ilusti välja!</p>
<p style="text-align: justify;">Kui tainas on vormi tõstetud silu seda pealt märgade kätega &#8211; nii jääb pealispind ühtlasem ja ilusam. Puista peale päevalilleseemneid ning suru need niiske käega tainasse kinni.</p>

<p style="text-align: justify;">Pildilt on näha, et tainas ei ole pärast 20 minutit vormis seismist teab mis palju kerkinud &#8211; vahepeal kerkib rohkem, vahepeal ma unustan leiva veidikeseks kauem kerkima, see ei muuda lõpptulemust.</p>

<p style="text-align: justify;">Küpseta leiba kõigepealt eelsoojendatud ahjus 250 kraadi juures 15 minutit &#8211; leivale tekib krõbe koorik, kuid seest ei ole veel valmis. Seejärel alanda kuumust 200 kraadini ning küpseta leiba veel 25 minutit, nii valmib leib ka seest.</p>

<p style="text-align: justify;">Valminud leib kummuta vormist välja. Tee käed külma veega niiskeks ning patsuta leiva küljed ja pealispind, nii säilib leiva mõnus krõbe koorik. Jäta leib rätiku alla jahtuma ning naudi sooja, kuid mitte tulist, leiba koos mõnusa ürdivõiga. Kui lõikad ahjusooja leiba, siis selle sisemus nakkub noa külge.</p>

4 tl soola<br />
200 <strong>ml</strong> suhkrut<br />
4-6 spl rukkilinnase jahu<br />
seemneid &#8211; vastavalt soovile</p>
<p style="text-align: justify;">Kahe leiva tegemiseks vajalike koguste retsept on algretsept, millest on võetud ühe leiva kogused. Pane tähele, et kahe leivateo retseptis on rukkijahu kogused <strong>milliliitrites</strong>, kuid enda jaoks kaalusin koguse grammidesse. Kui valmistad tainast kahe leiva jaoks, pane seda tähele ning ära mõõtmise asemel jahu kaalu!</p>

<p style="text-align: justify;">Ma ei ole 100% kindel, et just juuretise tõttu, aga mõnel korral tekkisid küpsedes leiva kooriku sisse lõhed. Erinevaid meetodeid katsetades avastasin, et kui leiba kergitada koheselt vormis (piltidel panen esialgu leiva 3 tunniks kerkima kaussi ning hiljem tõstan vormi), siis küpsedes lõhesid sisse ei tekkinud. Kui oled kimpus sama murega, siis proovi koheselt leib vormis kergitada.</p>
